Resurrecting Blueberries



I pulled an oldish container of blueberries out of the fridge the other day and wondered what to do with them.  Even when I brought them home "fresh," they didn't taste like much.  But I didn't want to waste them, so I decided to try throwing them in a pan with a splash of maple syrup and cooking on medium for 10 or so minutes.  Hallelujah. The flavor returned and they were sheer perfection atop a dish of plain yogurt.

I have some cut up mango in the fridge that's been sitting there a couple of days too long for the same reason as the blueberries.  I'll have to see if it works with mango as well, but I have my doubts.

Moral of the story:  eat local.  But I'm afraid I wouldn't find any fruit in season in Denmark if I went that route.  And I love bananas and oranges, but aren't we all getting a little tired of them by this point in the season?

  1. I bought a watermelon the other week, thinking it probably wouldn´t taste like much, but Freya wanted it, so I bought it - and it tasted absolutely wonderful!!! I´ve also got a coconut and a pineapple in the kitchen that I´m hoping will taste really nice. Coconuts are normally good this time of year - even if they are imported. At the moment I think the Pink Lady Apples are the best!!!
    I think you´re blueberries look so good. I only buy the frozen ones as I think the fresh ones are so expensive. I use them for smoothies. Yummy!!!!

  2. Do you know, I have never bought a fresh coconut? I need to just do it. But how do you cut and serve it? I am truly ignorant in the fresh coconut department. :-) I also love pink lady apples. So great to hear that the watermelon was delicious. Gives me hope. :-)

  3. I´m not actually very cut at the coconut opening business. I think some people cut it with a saw. The first time I tried to do it myself I used a hammer and actually broke my cutting board. Last time I just threw it on the paving stones in the garage and picked up the scrabs and washed them and then used a knife to get the pieces out the shell. Not exactly the prettiest sight - and I´m sure there are better ways to do it, but it was easy and I´m the only one in the family that eats fresh coconut, so...when you buy the fresh coconut shake it and make sure you can hear the milk inside. Otherwise it´s not good. And a bad coconut puts you off badly!!!
